Okay,

This is the OFFICIAL SPORTS B-B-Q/TAILGATE/SPORTS_PARTY Recipe Topic.

Since we talk a lot about food in here, and since so many of our
get togethers revolved around imbibing fine drinks and eating good food,
I thought it might not be a bad idea to share some of our expertise.


Personally, I'd love to see Mike Child's Seafood Gumbo recipe, or
hear more about Dickster's Sausage in Beer.  Claybroon does great ribs
(or so I've heard).....

So, feel free to enter recipes, cooking instructions whatever.  But
let's keep the digressions to a minimum.  We have the JN topic for 
that.....

Simple stuff really Saw. Ask and you shall receive but I don't give out
amounts of stuff cause I never measure....

	In a big pot boil one or two cans of beer with some fresh garlic
        add in a few bunches of scallions, a onion a couple of pounds of
        sweet and jalpeno peppers and pound or so of mushrooms.  Suggest
        you cut your veggies first before boilin' the beer. shove the veggies
        in the pot season with salt, pepper, cajun powder and chili powder.
        While this is simmmering boil up a couple of chickens, clean the chickens
        add them to the pot along with either fresh tomatoes or a couple of
        cans of crushed tomatoes. Check the stuff out and season again if 
        needed. Simmer for a few hours. During the the last half hour
        add the shrimp. You can boil and peal the shrimp whenever you like
        during all the other stuff going on but I suggest that you wait till
        like the last half hour before you're ready to serve to add them in.
        If you leave them simmering for too long they tend to get mushy and 
        loose flavor....

    Green Chili:
    
    	2 lb pork roast		trimmed of excess fat and cut into 1"
    				squares.
    
    	1 cup flour		in a bowl
    
    	2 cups green chili's    roasted, peeled and cut into 1" squares
    
    	1 yellow onion		cut into large chunks
    
    	2 cloves garlic		roughly Chopped
    
    	1 teaspoon Basil	(use your moutor)
    
    	4 HOT jalapenos		roughly chopped
    
    	2 tommatios 		quartered and seeded
    	(mexican tomato)
    
    	2 Potato (optional)	cut into 1" squares (add addtional cup water)
    
    	4 cups chicken broth	(canned or right from the bird)
    
    
     Coat the pork with flour and brown in frying pan.  When pork is 
    fully browned (not cooked) add onions and garlic cook for 2 minutes.
    dump pork, garlic and onions into a crock pot (or pot on stove). 
    Add all other ingredience and simmer for 4 to 5 hours.  Season with
    salt and pepper to taste

    Tailgate venison:
    
    Shoot a deer. Throw away guts.  Place deer on tailgate and set up
    grill.  Cut hunks of steak/chops/ribs with knife and/or hacksaw to

     I'm not actually a "true" Hoser...  I'm from Wisconsin.  About as
    close to Canada as you can get without getting wet though.  I do
    however know alot about beer and brats...  You ought to try the
    Johnsonville products,  they are pretty tasty !

	Best salsa I've found off the shelf is CHI-CHI's (hot of course)
	served on blue corn chips.    Come on ice cream!

	I do make my own though which brings tears to the eyes.  A friend
	of mine brings me back some habbanaro suace from Cancun twice a
	year.  Habbanaro is by far the most volital peppers that I've 
	ever eaten.  Kinda puts jap-a-la-nose to shame.  Haven't been
	able to find this stuff in the states though.  I think the
	FDA must have a ban on anything this hot.

Pace has a brand of salsa, something like "Hotter than Hell". And it is
and quite good.

I figger all that food is just to give you a thirst so I usually skip
right to the part where you start drinking.

    Pace is the stuff.  My wife won't let me buy anything hotter than
    medium from Pace.  Their medium is hotter than most other brands' hot. 
    Shotgun Willies is some pretty good stuff too, and it's made in Austin. 
    It's harder to find and more expensive than Pace, though.  Willy makes
    a Caliente Sauce which is basically ground up jalapenos.  Pure fire in
    a jar.
    
    Bill, there are a few people in Notesland that grow their own habs. 
    Check out the COOKS, GARDEN, and CHILE notesfiles.  They might be able
    to tell you where to get some.

Well, I like making homemade salsa - esp. in the summer when I cain use
my own tomatas, and this year I grew the hottest jalepanos I ever tasted.
I'm drying some now for use this winter.   I make a red or a green that's
real hot.  Also make a mexican 'table' salsa that is flavourful, but not
very hot - for those wh caint take the spice.

In seattle there was a brand (Maria's?) that was hard to find, but ver
good.  The Mexican markets downtown had some great home salsas.  Shotgun
willie's is decent.   Pace aint bad.

     You roast your own jalepanos...  If so,  peel them and freeze them,
    they hold their flavor much better.  You can roast them on you gass
    grille.  I did (with lots o` help form my girl friend) three bushels
    of chiles and half a bushel of jalepanos.  Just made some chili
    lasted(tm) night with the S.O., boy was it good !!!

    I didn't think jalapenos needed to be roasted.  Roasting is to remove
    the tough skin from chiles like New Mexican.  I froze jalapenos and
    serranos just fine by throwing them into freezer bags as is.
    
    If you smoke an jalapeno you then have a chipotle.  (Let's see what Kev
    & Dickstah can do with that one.)

We usuallly keep it pretty simple, something like; steaks, hamburgers, 
hotdogs, sausage...etc. With some type of salad and bag of junkfood (chips,
pretzels...whatever). Lasted game we had home-made chile before the game,
and hamburgers and hotdogs after the game.  This week we're gonna have
sausages before the game, and go to the Other Place Pub after the game.

I ususally bring 3 beers and 3 sodas, Denny usually brings about a six-pack
of beer, and /'r brings 12 (and on one occasion 18) beers, which he downs 
BEFORE the game, he says it's the only way to watch the Pats.

We all usually refuse to pay for any beer/food once inside that sorry 
concrete edifice.


So, ya see MikeL, we aint all that bad.

       Acktually I think I'm gonna do steak this week. And I found Sammy
    Oktoberfest cheap so I've been saving them for the Pats games. Might
    even bring a couple homebrews I got from a co-worker! Slasher drinks a
    ton before games because, as he says "The Pats are a sobering
    experience!"

    1)  Lessee, home-made chili, tons of beer, junk food, how "fragrant" was

    2)  Sam Adams is still brewed, although I don't know the quantity, in
    part in Pittsburgh at Pittsburgh Brewing, the same place where Iron
    CIty beer is brewed.  Has been since it firsted hit the market.
    
    3)  Penn Pilsner is still one of the best beers I've ever tasted.

     Unless I'm mistaken (and I almost never am) JD's nice and 
    sweet routine was in response to something I wrote about him 
    trying to step into MrT's shoes (God knows why he'd want to 
    do that). My note was entered in the NL note but was really 
    in response to a note about Ali that I found very offensive 
    and inflammatory and bordering on cruel in the grand old T 
    tradition nevertheless my note may have been ("may have been" ? 
    ok, WAS) out of line. Just wanted to get that off my chest.

    The ultimate Tailgate Stew..... You want to feed a parking lot party.

    Here it is!!!!

    ELEPHANT STEW! ala REK....

    1 Med.-size elephant               2 rabbits, optional
    Salt and pepper

    Cut elephant into small bite-size pieces. The should take about 2
    months. Add enough brown gravy to cover. Cook over kerosene fire
    for about 4 weeks at 465 degrees. This will serve 3800 people. If
    more are expected, 2 rabbits may be added. Do this only if necessary
    as most people don't like to find hares in their stew.

     I buy (bought) my chilies at the farmer market down at Bancroft
    Park near World Famous Meadow Muffins.  The market run during the 
    summer.  You can get chilies at King Supers, there really fresh
    ad quite tasty.  I dare say,  they are not quite as tasty as the 
    ones we got from the market and roasted and Froze at home.  MMMMMM
    Good !!  And hotter than a camels A$$ in the desert sun.

    Snowing right now....  Mountains are supposed to get 1' to 2' feet over
    the next few days.  Breckenridge is open but I'm not sure how the snow 
    is since I haven't been there yet.  I'm going snowboarding this
    weekend, it should be killer.  Now that is a great sport.  I'm just
    learning and the first few time are real hard on your a$$ but once you
    get it figured out it's got a real steep learning curve and it is one
    hell of a good time.  MikeL,  you get out this way again and we'll do
    some boarding you shredder dude.  (Shredders are snow boarders)

    I was at Breck in March of '91. I was shopping at the local store
    when I was approached by a monster, 6' way up there, wif cowboy
    hat, kinda ornery looking. Here I is 5' 8" looking up at this dude at
    least a foot taller whence he says to me after noticing my Notre
    Dame sweatshirt ( this being a coupla months after the ND-CU Orange
    Bowl which Cu won, 10-9), " How ' bout them Buffaloes!" I smiled
    and said " Yea, you CLIPPED us."  He laughed thank God. If he hadn't,
    mighta been a painful vacation.
