    Is this for uk hip hop alone, or hip hop in general?  I have had a 
    really hard time finding a note file on Rap or Hip Hop.  If anyone

Doubt if there is one. Most music noters seem pretty uninterested in rap.

OK, a question about scratching, y'know, the bit where the guy at the back
with the record deck puts the needle on the record and then wiggles the
record to make that wah-wah noise. 

What records do they use as a source?

Nothing valuable presumably.

They usually work with 2 or 3 turntables at once, using several copies
of the same 12" single. They wear out pretty fast I've heard.

You can buy albums, that just contain rhythm loops for a similar purpose. 
I have one at home (but I don't use it for that).

    You can make the scratch noise with any old record although an up tempo
    record does the noise best.
    
    There are two popular noises made by moving the record by hand these
    are,
    
    Backwind.......Turn the volume control on the deck down and
    simultaneously spin the record back and put the volume up.(Turn the
    volume back down before the record stops completly.)
    
    Scratching.....Moving the record back and forth with your hand while 
    cutting the volume out completly.(Easier with a channel switch on a
    mixer).

I.E.  switching the sound on and off repeatedly.
