    Does anyone have a recipe for Chinese Black Bean Sauce? I had some
    chicken wings in it last weekend and they were delicious! The sauce
    I had was medium hot and had lots of garlic.

    I stir fry with black bean sauce all the time, but I never use a
    recipe, so I'll try to wing it.  To start with, you should go to
    Chinatown and buy a package of black beans.  The kind I buy comes
    in a round cardboard container and it does say "Black Beans" on
    the container.  The trick is to take some black beans and place
    them in a bowl ~1 tablespoon.  Mash the beans with the back of
    a knife handle.  Add fresh crushed garlic and mash it in together.
    To stir fry, add some oil in a wok ~2-3 tablespoon.  Heat the oil
    until it smokes.  Swerve till oil covers surface of pan.  Add
    blackbeans and garlic and stir fry for about 10-20 seconds.  Add
    chicken wings and stir fry for about 1 minute.  Add some water,
    let boil, and then cover.  Cook for about 5 minutes or until
    wings are cooked (depends on size of wings).  Lift cover and add 
    seasoning to taste (I usually use white pepper, sesame seed oil,
    and soy sauce).  Add cornstarch and water mixture to thicken (follow
    any standard recipe for thickener).  Let it come to a boil and
    serve.  To make it spicy, use peppers.  I usually use the red stuff
    that comes in a bottle.  That's sold in Chinatown also.
    Sorry for a recipe that's not exact, but I stir fry all the time,
    and never use a recipe.  I think you could pick up any Chinese
    cookbook and find a recipe for chicken and black bean sauce.  Black
    beans are use commonly in Cantonese cooking, so I'm not sure if
    you would find it in a Mandarin cookbook.  If you've never stir
    fried before, you may want to try the bottled black bean sauce,
    though I've never used it, so I can't tell how it will come out.
