3097.0. "Mulberry recipes wanted" by SALEM::RUSSO () Mon Jun 24 1991 23:50

      I've searched through a lot of notes and haven't been able to find
    any recipes using Mulberry's. I have a tree in the back yard just
    loaded with them. (They look like blackberry's but don't have a real
    strong or sweet flavor). Anyone out there have any recipes?

      I hate to have all those gallons of fruit go to waste. robin

    Ah, mulberries! My great-grandmother had one out back of her house on
    the family farm in Louisiana; we kids used to climb it and lounge
    around the branches munching berries (and making a serious mess of 'em,
    too - those things stain like fury).

    Actually, neither her tree nor the one my folks have has ever produced
    huge amounts of fruit for human consumption - the birds usually get it
    first. (You want to see some happy mockingbirds? Plant a mulberry
    tree.) You're in New Hampshire, right? I'm surprised - I thought
    mulberries would only fruit in warmer regions...

    I'll check my books for specific recipes when I get home, but I'd
    suspect that most berry recipes could be used for mulberries, adjusting
    the sweetening to taste.

    Guess what. No mulberry recipes. Even "Joy of Cooking" just said of
    them, in a rather snide tone, that they were best suited for the
    depradations of schoolboys... Heck, I know they're pretty
    mild-flavored, but honestly! [If you want to try cooking with them
    anyway, check out the blackberry recipes in note 1972 and use those.]

3097.3Mulberries doing well in Mass.SALEM::RUSSOWed Jun 26 1991 14:498

      I live in Fitchburg,Mass. The tree seems to really thrive. I don't
    feed it or anything. It does get full sun from sun-up to sun-down so
    maybe that's why it does so well. I'll try some of those blackberry
    recipes. If I find anything that works well I'll post it.
      I have tried juicing them but the flavor isn't very stong.

Several years ago a house guest of mine insisted on making us a pie from
the mulberries she found growing wild nearby.

We all had to admit that it was the worst tasting pie we'd ever had. The
mulberries did not pick up any sweetness from the the sugar syrup (for lack
of a better word) we mixed them in. Maybe if they had been mashed up it
would have been better, but I have no interest in trying it again. Sorry,
I do not remember the recipe, but then I doubt you'd want to make it!
3097.5How about wine?WMOIS::BOHNET_BThu Jun 27 1991 19:064
    Never made jam or pies, but my Mom used to make Mulberry wine, as I
    remember (I was just a kid!!!!) it was real good, light and sweet.
