    This is the offical Hot Fudge Pudding Cake recipe note.  This 
    must be one of the most repeated desserts (I'm not complaining,
    it's my all time favorite!) in this file, I'll try to give each
    note a meaningful title.  Do the following command to see the

		Hot Fudge Pudding Cake

(During baking a cake layer forms on top and rich chocolate sauce
appears on the bottom. Serve with topping of whipped cream or
vanilla ice cream, or accompanied by a glass of milk.)

1 c. buttermilk baking mix	1/2 c. milk
1 c. granulated sugar		1 tsp. vanilla
3 T. plus 1/3 c. unsweetened	1 2/3 c. hot tap water
	cocoa powder		confectioner's sugar (optional)


Preheat oven to 350 degrees F.

Mix buttermilk baking mix, half of the granulated sugar (1/2 c.),
and 3 T. cocoa mix. Stir in milk and vanilla until well blended.
Spread in greased 8" square baking dish.

Mix remaining 1/2 c. of sugar and 1/3 c. of cocoa powder, and sprinkle
the mixture over the top of the cake batter. Pour the hot water over
the top. [Do not mix the water in! I usually put the pan on the oven
rack before adding the water; less chance of spilling it.]

Bake at 350 degrees F. for 40 minutes or until the top is firm. If
desired, dust with confectioner's sugar. Serve at once in dessert bowls.
Makes 6 servings.

(Per serving: 245 calories, 3 grams protein, 52 grams carbohydrates,
5 grams fat, 3 mg cholesterol, 271 mg sodium.)

Safeway Food Stores carry a brand of buttermilk baking mix called
"Mrs. Wrights". Another well-known brand that I have seen in stores
from Chicago to Los Angeles is called "Bisquick" I really don't know
what company puts it out....it's in a bright yellow box and gives
alot of recipes on the back of the box for pancakes, coffee cakes,
etc. It's a real handy short-cut way of preparing alot of different
things.

    I think this is the recipe you're looking for.  I copied it out
    of my own mother's ancient and crumbling Fannie Farmer cookbook
    so this is printed without her permission (Fannie Farmer's, that
    is).  (P.S., I don't know what the "Denver" means!)
    
    DENVER CHOCOLATE PUDDING
    ------------------------
    
    Sift together:
    
    3/4 cup sugar
    1 cup flour
    2 teaspoons baking powder
    Pinch of salt
    
    Melt together over hot water in double boiler:
    
    2 tbls. butter
    1 ounce unsweetened chocolate (or 3 tbls. cocoa)
    
    Add chocolate/butter to the flour mixture.
    
    Stir in:
    
    1/2 cup milk
    1/2 tsp. vanilla
    
    Mix well and pour into a buttered 9" X 9" baking dish.  
    
    Scatter over the top, without mixing:
    
    1/2 cup brown sugar
    1/2 cup white sugar
    4 tbls. cocoa
    
    Pour over the top:
    
    1 1/2 cups cold milk, water, or coffee 
    
    Bake 40 minutes at 350 degrees.  Let stand at room temperature and
    serve cooled but not chilled.  Top with whipped cream or ice cream.
    Serves 6.

    Here is the "authentic" recipe for Brownie Pudding--the best dessert
    in the world!
    
    	1 c. flour		2 Tbl. cocoa
    	2 tsp. baking powder	1/2 c. milk
    	1 tsp. salt		1 tsp. vanilla
    	2/3 c. sugar		1/2 c. chopped walnuts (optional)
    
    	Sift dry ingredients together. Add milk, vanilla and nuts and
    	stir to combine.  Melt 2 Tbl. margerine in a baking dish (I
    	use a standard size pie plate).  Pour batter into dish (batter
    	is thick, so you may need to spread it a bit).  
    
    	Combine 1 cup sugar and 4 Tbl. cocoa. Sprinkle this over the
    	batter evenly.  Place baking dish in pre-heated (350 degrees)
    	oven, then pour 1 and 1/2 c. boiling water over everything.
    
    	Bake at 350 for 30-40 minutes.  Serve warm or cold with whipped
    	cream or ice cream.

    	Heat oven to 350. In medium mixing bowl combine 3/4 cup sugar,
    flour, 3 Tbsp. cocoa, baking powder and salt. Blend in milk, melted
    butter and vanilla; beat until smooth. Pour batter into a square
    pan, 8x8x2 or 9x9x2 inches. In a small bowl combine remaining 1/2
    cup sugar, brown sugar and remaining 4 Tbsp. cocoa: sprinkle mixture
    evenly over batter. Pour hot water over top; do not stir. Bake 40
    minutes or until centeris almost set. Let stand 15 minutes; spoon
    into dessert dishes, spooning sauce from bottom of pan over top.
    
    Garnish as desired.
    Serves 8-10.

    Here's my recipe. It's from a Hershey's ad.
    
    
    1-1/4 cups sugar, divided
        1 cup all-purpose flour
        7 TBS Hershey's cocoa, divided
        2 tsp baking power
      1/4 tsp salt
      1/2 cup milk
      1/3 cup butter or margarine, melted
    1-1/2 tsp vanilla extract
      1/2 cup packed light brown sugar
    1-1/4 cups hot water
    
    Notes: 
    	- I substituted 1/4 tsp almond extract for 1/4 tsp of vanilla.
    	- I reduced the amount of sugar
    
    Heat oven to 350 degrees. 
    In medium mixing bowl combine 3/4 cup sugar, flour, 3 TBS cocoa,
       baking power and salt.
    Blend in milk, melted butter and vanilla.
    Beat until smooth.
    Pour batter into square pan, 8x8x2 or 9x9x2 inches.

    In small bowl combine remaining 1/2 cup sugar, brown sugar
       and remaining 4 TBS cocoa.
    Sprinkle mixture evenly over batter.

    Pour hot water over top. Do not stir.
    Bake 40 minutes or until center is almost set.
    Let stand 15 minutes. Spoon into dishes, spooning sauce 
       from bottom of pan over top.
    
    Garnish (with whipped cream?) as desired. Enjoy
    
    Makes 8-10 servings.

    After reading this recipe, I thought for a change of pace, you might
    want to try an easy lemon sauce. It is real simple to make and I
    usually serve it on a plain white cake (from a small cake mix). This
    cake mix is called "Jiffy".
    
    			EASY LEMON SAUCE
    
    Using a lemon pie filling mix, combine pie filling mix, 1/2 cup sugar,
    and 1/4 cup water in pan.  Blend in 1 egg.  Add 2 3/4 cups water. Cook
    over medium heat, stirring constantly until mixture comes to a FULL
    BUBBLING BOIL. Serve warm or cold. Makes 3 1/4 cups.
    I find it tastes better served warm.

    I have a question on .5 (although it's an old note).
    
    Whats this suppose to look like when it's done? A brownie? Pudding? A
    soggy, pudding-like brownie?
    
    Sounds great and I'm going to try it, but I just want to be sure of
    what it is I'm hoping it looks like when I'm done...

    It looks like a brownie, it tastes like HEAVEN!  
    When you cut into it, you scoop out the pudding
    that's formed on the bottom with the brownie.

    Hi Beth,
    It really is good and easy, but it has to be served as soon as it cools
    a bit (not completely).  Once it sits around a while, the fudge on the
    bottom isn't as liquid.

Oooohhhh - I dunno about that. It's pretty good when it's cold, too, after the
"pudding" has had an opportunity to congeal - _especially_ with fresh whipped
cream or vanilla ice cream.
