3056.0. "Choco-Banana Squares" by TLE::EIKENBERRY (Don't confuse activity with productivity) Thu May 23 1991 14:29

These are one of my childhood favorites. My grandmother would always have
some in the freezer when we went to visit.

			Choco-Banana Squares

	Cream together:

		2/3 Cup margarine
		2/3 Cup sugar
		2/3 Cup light brown sugar

	Mix in:

		1 Cup mashed bananas

In a separate bowl, combine dry ingredients:

		2 Cups flour
		2 tsp baking powder
		1/2 tsp salt

Add dry ingredients to wet mixture.

Stir in 6 oz. of chocolate bits.

Spread batter in a greased and floured 10 x 15-inch jelly roll
	pan. Bake in a 350 degree oven for 20 - 25 minutes.

The recipe doesn't talk about how to know when these are done. I just go
by the color. When the top is a consistent light golden brown, they're
ready.

These square are better when they're completely cooled than when they're
fresh out of the oven. And really good right out of the freezer!

I made this yesterday. It's excellent. The cake is light and fluffy.
I'll add this to my list of favorites.

Thanks for the recipe,

Linda

SCRUMPTIOUS!!!!! and they ARE better from the freezer -- almost as
good as frozen bananas on popsicle sticks covered with melted
chocolate...but probably a bit [but just a teeny bit!] more fattening!

great way to use up those too ripe bananas.

What if you don't have a jelly roll pan?

Use a large cake pan the rectangular type, and line the bottom with wax
paper or parchment, let the ends come up over the ends of the pan. I
have done this when at camp and needed to improvise.... It worked.
Made the jelly roll thicker, than I liked, so the next time, I didn't
pour so much into the pan. Came out fine.

I've actually been using two 8x8-inch pans instead. Works just fine.
Though perhaps a little harder to get the squares out.
