    Hi,
    
    Does anyone known how to make raspberry vinegar?  I bought some
    the other day and it's wonderful and was thinking about trying
    to make some..

    A friend of mine makes raspberry wine which is absolutely delicious,
    there was never any left to make into vinegar. :*)

I did a little research and turned up note 24.0.  The recipe is quite simple,
and is given at the bottom of the note (which is a recipe that uses it as an
ingredient).

I've used the recipe in 24.0--very easy and very good.  I know the Frugal
Gourmet lists a recipe in his Cooks With Wine cookbook that uses fresh or frozen
raspberries that would probably be lower in calories than the preserve method.
As a matter of fact, I have a package of frozen raspberries in my freezer that
I bought with just that in mind, although I haven't made the vinegar yet!!

    This is a great marinade using raspberry vinegar. It is used on lamb
    or chicken. It might be okay on pork. If you don't like raspberry 
    vinegar you won't like this recipe.
    
    1/2 cup raspberry vinegar
    1/4 cup soy sauce
    1/2 cup red wine
    1/2 cup fresh mint leaves
    3 tablespoons peppercorns (that is  3 tablespoons measured whole, after
      measuring crush the peppercorns
    3 cloves of garlic diced
    
    Mix all ingredients and marinate meat. Longer you marinate stronger the 
    flavor.
