I've searched high and low throughout this file, and can't seem to find the
kind of vegetable recipe I'm looking for.  I need some sort of melange for
Christmas that I will be bringing, so I must be able to prepare it in advance
and heat it in either an oven or microwave.
There will be two diabetics eating it, so it can't be oily or starchy.  I would
like it to be only veggies.  Any great "special" recipes out there that fit 
these requirements?

P.S. I already did dir/titles on vegetable, broccoli, bean, carrots...and found
nothing.

How about ratatouille?  Chunks of squash, eggplant, onion, pepper, herbs and 
spices in a chunky tomato stew.

    In a cookbook I bought when I got my KitchenAid mixer there's a very
    simple recipe I've had good luck with called 'Melange of Squash'.
    
    Basically it's one or two Zucchini, one or two yellow squash, and three
    or four carrots, all chopped up very fine. The recipe called for this
    all to be sauteed in butter, but I've had just as good - if not better
    - results just heating it in the microwave (less fat). Get it good and
    hot, and just before serving stir some fresh lemon juice (I use maybe
    1/2 to one whole small lemon) into it, and maybe some salt & pepper.

    Vegetable Medley
    
    
    In a large pot (4 quart) put in any vegetables you want...i.e.,
    broccoli, cauliflower, carrots, green beans, lima beans, canned
    corn, frozen peas, etc.!
    
    Pour in one large bottle Italian (salad) dressing (you can buy the
    low fat, low calorie, lite) and then fill up the bottle with water
    and pour that in.  Simmer...serve.  Can be cooked at home and
    then put in the microwave for 3 minutes to reheat.
    
    That's our vegetable dish for Easter...a big hit!
