I recently got my hands on a Sears electric meat grinder. Unfortunately I 
don't have an owner's manual.

The grinder has three different metal attachments with various sizes of slots 
or holes that the meat is apparently forced through. Sausage-stuffing tubes 
are included with the grinder.

I assume that one grinds the meat and fat into a bowl, mixes in the spices 
by hand, and then runs the meat through the grinder again with a
stuffing tube and sausage casing hooked up.  

Is this the way to go? Any tips/suggestions?

this is your basic sausage making procedure...nice thing is you can use much
less fat to meat ration than the commercial kind...you can also add a dash
of white wine to nice veal sausage (French style), red wine to beef suasage,
or even a dribble of congac?  What fun to experiment.

FYI - your sausage casing should contain handling info, but be sure to rinse
it well as it is salted for preservation purposes and must be well rinsed..
and don't fill the casing too full - what seems a little anemic to your
is probably just right after cooking.

    Anyone know where to get one of the old fashioned hand-turned meat
    grinders in Central MA/Southern NH?  We use a food processor to grind
    meat right now and it's OK but seems a little to finely chopped at
    times.

    I'd check out the flea markets if I were you.  I can't remember
    where that big huge flea market is - perhaps someone out there
    will know where I'm talking about.  My Mom got one there that was
    shiny as new for $10.  It was a great deal!

    KMART, WAL-MART, BRADLEE's, ETC....

    They are still on the market.  I do have one from the 40's myself but
    have seen them around and about.  No need for flea-marketing for it.

    I got mine directly from the manufacturer. They will drop ship. They
    are the CHOP-RITE MFG. CO. Address is in Pennsylvania, I believe. I'll

I'd also try MacDonalds Kitchen supplies in downtown Nashua. I'd bet that
if they don't have it (which is actually unlikely) that they can get it.
