    Since we are in prime harvesting season for our strawberries,
    I was hoping to find a recipe for strawberry bread.  My husband
    bought some at one the DEC cafeterias and thought it was
    pretty good.  Anyone out there have any kind of recipe for this?
    I've already made jam, strawberry rhubarb pie, and I'd like to
    find something like this.

    Hi,
      I have a recipe for strawberry bread. I have never tried this but, it
    sounds good.
    
    3 cups mashed strawberries
    3 cups flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    2 cups sugar
    1 teaspoon salt
    1 1/4 cups oil
    4 well beaten eggs
    
    Drain 1/2 cup strawberry juice from mashed strawberries and reserve for
    topping. Mix next five ingredients together. Make a well in center of
    mixture. Stir in by hand, strawberries, oil, and eggs. Pour into two
    greased 9x5 inch loaf pans. Bake for 50 to 60 minutes. Cool on wire
    rack.
    
    Topping: Blend reserved strawberry juice with 8 ozs. softened cream
    cheese. Drizzle over loaves.

    Hi,
    
      This is a good desert for four!
    
    3 eggs
    1/2 cup flour
    1/2 cup milk
    1/4 teaspoon salt
    2 tablespoons butter,melted
    2 tablespoons sugar
    
    2 tablespoons sliced almonds
    1 tablespoon butter, melted
    2 tablespoons confectionery sugar
    1 tablespoon lemon juice
    3 1/2 cups sliced strawberries sweetened with 1/4 cup sugar
    1 cup heavy cream whipped
    
    Beat eggs well. Slowly add flour, beating constantly. Stir in
    milk,salt,and sugar. Pour into a 9 inch greased quiche dish and bake at
    450* for 12 minutes, or until brown and fluffy. Remove from oven and
    sprinkle with almonds and sugar. Drizzle with a mixture of butter and
    lemon juice. Top with berries and whipped cream. cut into quarters.

    And here's another berry bread. I've tried it in the past and
    liked it a lot.
    
    For 1 8-by-4-inch loaf:
    
    2 cups all-purpose flour
    1/2 teaspoon salt
    1 teaspoon baking powder
    1 teaspon baking soda
    1/2 cup soft butter or margarine
    1 cup sugar
    1/2 teaspoon almond extract
    2 eggs
    1 cup crushed hulled fresh strawberries
    
    Stir together flour, salt, baking powder, and baking soda. Set aside.
    In medium bowl, cream together butter, sugar, and almond extract
    Add eggs, one at a time, beating thoroughly after each.
    Add flour mixture and berries, mixing only until blended
    Grease an 8-by-4-by-2-inch loaf pan, then line with waxed paper and
    grease paper. Turn batter into pan, smoothing top evenly with spoon.
    
    Bake at 325 degrees for 50 to 60 minues or until pick inserted in
    center of loaf comes out clean. Let bread stand in pan on rack for 10
    minutes. Then turn out on rach, peel off paper, and turn bread
    rightside up to cool completely.
    
    When cold, wrap airtight and let bread stand for 1 day before slicing.
    
    
    Enjoy!

I made the second recipe for the Strawberry bread.  Just couldn't justify
making two loaves and have one sit in the freezer.  But I did use the 
"glaze" from the first recipe.  It is really good!  Had it for 
breakfast this morning!

    Yes, I've made the first one too, but we've only eaten one of the
    loaves - delicious!
    
    We're saving the second one for a small party we're holding to celebrate
    our daughters 2nd birthday - but I'm having trouble keeping my husband
    away from the freezer!! - guess I'll just make some more.

    On the first bread recipe you can make only one loaf. The recipe can be
    easily halved. Also I added walnuts.

    After reading everyone's raves I had to try one of these breads myself.
    I made the first recipe and it was indeed excellent !  I didn't make a
    glaze because I don't particularly care for cream cheese, but
    nonetheless it was still very tasty.  Next time I'll give recipe #2
    a try. Thanks for posting these.
