    Does anybody have any recipes for the Prickly Pear Cactus?
    
    One of the stores here sell them and I was just wondering where

Peel - VERY CAREFULLY - chop up in salads where you want a crunchy
texture.

Also good when marinated in vinegarette.

    I have a recipe around someplace for prickly-pear fruit muffins.
     They are pretty good, sort of reminiscent of cranberry muffins.

    They make WONDERFUL jelly.  Don't add water if you can
    help it...it changes the color from ruby to a sort of
    non-descript peach.

    The Shaw's in Stratham and Nashua, NH have it from time to time.
    I think I saw it in the Purity Supreme in Woburn once, too.

    Thanks for all the cactus pointers.  I wound up buying a couple cans
    from the owner of Casa Romero.  I don't believe he was terribly
    enthusiastic about it, although he was pleasant to deal with. I shall
    have to try some of the places suggested in the previous replies.

    CACTUS MEXICANO
    ---------------
    
    2 lbs. nopales (cactus pads)
    1 large tomato, diced
    1 small onion, chopped
    1 clove garlic, minced
    1/2 cup chopped fresh cilantro
    1 1/2 tsp. salt
    1/2 tsp. pepper
    
    Carefully remove thorns and eyes from nopales with a sharp knife;
    trim outer edges, and cut nopales into 1/2-inch pieces.  Place in
    a saucepan with water to cover; bring to a boil.  Reduce heat, and
    simmer 30 to 40 minutes or until tender.  Drain and let cool.
    
    Combine nopales, tomato, and remaining ingredients, tossing gently
    to combine.  Yield:  6 servings
