3783.0. "looking for Ausie kids party food recipes" by REFINE::HUGHES () Wed Apr 14 1993 11:44

My husband is a transplanted Ausie. We are planning our child's first
birthday party and he wants to include some kids birthday party foods.

His first thought is lamingtons. He says they are squares of cake
(sponge type cake) dipped in chocolate and rolled in coconut.
Does anybody, especially those down-under, have this recipe or any
    other kids party recipes.

    Thanks
    Linda

Hi Linda

I'll have a look for a typical kiwi recipe tonight, I'm sure I've got one
somewhere.

How 'bout Vegamite sandwiches? If you can't find Vegamite,
	just use motor oil.

	:-) :-)

Motor oil is the wrong texture -- try axle grease instead.

Hope the below will suffice. I never made them myself, but got this recipe from
the trusted Edmonds cookbook, which every household in New Zealand owns. Let me
know how they turn out.

Regards
Dianne

LAMINGTONS

Make the sponge below. Leave until the next day, cut into large squares. Dip
each into chocolate icing, then roll in coconut. Leave to dry.
You will need approx 225g (1/2lb) coconut for coating the lamingtons

CHOCOLATE ICING

2 Tablespoons butter 350g (3/4lb) Icing Sugar
2 Tablespoons Cocoa few drops of vanilla essence
6 Tablesppons Boiling Water

Melt butter, add cocoa dissolved in boiling water. Mix in sifted icing sugar,
then add vanilla essence. Beat well.

SPONGE

Put into a basin, one cup flour and 3/4 cup sugar; break in 3 eggs, add 3
Tablespoons melted butter and 2 Tablespoons mils. Beat for 3 minutes, then stir
in two teaspoons of baking powder. Put into sandwich tins (rectangle tins), bake
at 190C (375F) for 15 to 20 minutes.

This is probably a bit late, but a two suggestions I would make would include
fairy bread and chocolate crackles.

Fairy Bread
-----------

Butter about half a loaf of white bread. Cover with "Hundreds & Thousands"
(little coloured sweet sprinkles). Trim crusts off bread & slice into
triangles.

Chocolate Crackles
------------------

250 grams Copha (coconut shortening - MUST be coconut)
4 cups of Rice Bubbles (Puffed Rice)
1 Cup of Sifted Icing Sugar (confectioners sugar)
3 Tablespoons of Cocoa (cooking cocoa not drinking cocoa)
1 Cup of Desiccated Coconut. (can be long strands, pref. short)

Melt the Copha on low heat, then mix in all the dry
ingredients. Spoon into paper aptty cases.
This will make approximately 24 patties.

Refrigerate until set, then refrigerate 'til needed.
