			BUTTERSCOTCH SAUCE

INGREDIENTS:

	1 and 1/2 cups dark brown sugar (well packed in measuring cups)
	1/4 cup water
	4 Tablespoons unsalted butter
	1 cup whipping cream
	1 Tablespoon apple cider vinegar

INSTRUCTIONS:

	Combine sugar and water in heavy bottomed sauce pan that
	holds at least 2 and 1/2 quarts.  Stir over low heat until
	the sugar dissolves, then raise the heat to medium and
	bring to a boil.  Let the mixture boil until it rises in
	the pan, gets very foamy, and starts emitting puffs of
	smoke(steam).  Drop in butter and stir until it dissolves.
	Stir in the cream.  Return to a boil, then turn off heat
	and stir in vinegar.  Cool to lukewarm.  Use immediately
	or refrigerate and warm in the double boiler or nuke
	in the micro at defrost until warmed.

	Makes two cups.  Good over baked apples, over ice cream,
	over apple pie...

I made Butter pecan cookies by substituting butterscotch and pecans for the 
chocolate and walnuts in a standard toll house recipe.  They were sweeter, 
yes, but tolerable because of their size.

    Sub the chips and reduce the sugar in the recipe a little.
    You might have to try this to see what you can get away with
    and still have a good textured cookie.
    
    Or, you could use butterscotch flavoring - one good one I've
    had is called VANILLA BUTTER NUT, although I've been looking
    for it in the store ever since I ran out of it.  Haven't checkec
    d market basket yet....

    One of my favorites has been to add butterscotch chips to your basic
    oatmeal cookie recipe.  The oatmeal cookies aren't very sweet to
    begin with, so adding the chips doesn't make the cookies overly
    sweet.

    Mock Butterscotch Custard
    
    1 cup firmly packed brown sugar	3 cups milk
    6 tablespoons flour			3 eggs separated
    3/4 teaspoon vanilla
    
    Mix sugar and flour thoroughly; add milk slowly, stirring until
    smooth. Cook over boiling water for 15 minutes. Stir small amount
    into beaten egg yolks, then return to remaaining hot mixture and
    cook 2 minutes longer; stirring constantly. Remove from heat and
    fold gently into egg whites, beaten stiff but not dry. Add vanilla
    and cool. Creamy!
    
    
    Butterscotch Sticks
    
    1/4 cup butter		1 cup sifted flour
    1 cup brown sugar		1/4 teaspoon salt
    1 egg			1 teaspoon baking powder
    1/4 cup broken pecan meats	1 teaspoon vanilla
    
    Melt butter in saucepan, add sugar and when well blended, remove
    from the fire and cool in the saucepan until it's lukewarm. Add
    unbeaten egg to mixture and beat well. Mix flour, salt and baking
    powder and add to the sugar mixture, then add the nuts and vanilla.
    Spread the mixture in a shallow pan lines with plain paper that's
    been ggreased. Bake 30 minutes in a 400 degree oven. While hot,
    cut into strips and inch wide, and about four inches long. About
    two dozen sticks.

    Thanks for all the replies!
    
    Just as I was getting ready to try a white chocolate mousse flavored
    with butterscotch, I was told that I could do anything else, experiment
    with anything else, alter anything else except the pie!
    
    So, I ended up making the traditional pie with butterscotch meringue!
    And I thought if he is so easy to please, what am I, nuts for wanting
    something "fancier"??
