474.0. "CASSEROLE: Seafood Casserole" by SAFETY::WALKER () Tue Dec 30 1986 00:17

My wife is thinking of having the family over for New Years Day.
She wants to make a seafood casserole, but doesn't have a recipe.

    Can anyone help in time?

I hope this isn't too late for you to use. This is my mother's
recipe for a Seafood Casserole. It is easy to make and very good.

    Mix in a bowl:

    1 cup crabmeat, lobster, shrimp,
    1 medium-sized onion, minced
    1 medium-sized pepper, minced
    2 hard-boiled eggs, chopped
    1 cup medium cream
    1 cup mayonnaise
    1 cup seasoned bread crumbs

Put mixture into ungreased casserole dish or individual shells.

Crush some milk crackers (enough to cover the casserole dish) and
add melted butter until they are moist. We usually use a rolling
pin and crush them until they are almost a powder.

Put cracker crumbs on top of the mixture in the casserole dish.

Bake in oven at 350 for 20 to 25 minutes.

    NOTES:

My mother tends to use Langostino (I hope I'm spelling that
right) in place of other seafood.

Also, when we are doubling this recipe, we don't increase the
amount of eggs, pepper, or onion.
