I'm attending a business dinner next week, and I got a peak at
    the menu, which look delicious, but the apetizer has got me...

      A Galantine is a pate that is rolled into a round sausage like
     shape. It is usually poached and served at room temperature. 
     Also it isn't usually a very finely ground texture but chunky
     in texture like a country style pate. I've had the dish many
     times and liked it.
