From Eleanor Early's New England Cookbook:

    Maple Syrup Pie

    1 c maple syrup
    1 c water
    1/4 t salt
    1 T butter
    2 T cornstarch
    1 T cold water
    2 eggs, separated
    1 T maple syrup

Put first four ingredients in a saucepan and heat to boiling point.
Mix cornstarch with 1 T cold water and add to egg yolks. Beat
well. Add hot syrup gradually to egg mixture and cook over low
heat, stirring constantly until thick. Cool slightly. pour into
cooked pie shell. Beat egg whites stiff. slowly add 1 T syrup.
Spoon over pie, forming peaks with back of spoon. Place in 350
degree oven, 12 to 15 mins. until golden brown. serve warm or cool,
    never hot.
