Garlicky Shrimp

1/4 pound (1 stick) butter
1/4 cup vegetable oil
2 cloves garlic, minced
2 bay leaves
1/2 teaspoon crushed, dried oregao
Salt and freshly ground pepper to taste
1 teaspoon crushed red pepper flakes
Dash of lemon juice
1 pound medium to large shrimp in the shell


Melt the butter in a 3-quart pot or skillet with a lid.  Remove from
heat.  Add oil, garlic, bay leaves, oregano, salt, pepper, red pepper 
flakes, lemon juice and shrimp.  Toss well.  Set aside for 30 minutes
(butter may solidify), stirring occasionly.

Place the pot over low to medium heat and allow to come to a bubble
gently, not vigorously.  Stir.  Cover and cook shrimp 5 minutes or 
just until they turn bright pink.  Spoon shrimp into 2 serving bowls.  
Divide pan juices between the servings.  Serve immediately.  Makes
2 servings.

(I use a 1 1/4 pounds of shrimp for three servings.)

    I rinse them off before I throw them in the pot but I don't 
    peel them until after serving.  So, yes, shrimp in the shell!
