Does anyone know the details of this new fat substitute?

I've been hearing about it for years, but wasn't aware it was actually on
the market until last night when I got some fat-free ice cream made with
Simplesse (by the same company that makes Nutrasweet.)

How many calories does it have?  Can you cook in/with it?  What are the
dangers? Can you buy it straight?

And if it is such great stuff, how come it hasn't permeated the
market like Nutrasweet did?  How come we aren't seeing Simplesse potato
chips and Simplesse cheese?

I believe it just received FDA approval recently, and, like with Nutrasweet, 
they are taking it slowly.  I have not yet heard anything about making it
available in an oil or shortening type product yet, but we can hope!

    Simplesse can not be used for cooking -- either for baking or frying.
    Supposedly there is another fat substitute (I think it might be Olestra)
    that is awaiting FDA approval, which can be used in cooking.

    It's an ingredient in commercially made foods.  Ice cream, for example.
    It's not something you buy as an ingredient to use in cooking...

    I tried this and was not at all impressed.

    I like the texture and taste of ice milk better.

    Really?  I found the chocolate-caramel Simplesse Light to DIE for.  But
    then, I can't eat sugar, so there are no commercial ice milks I can
    eat...perhaps I've forgotten what they taste like.  :-)
